Stuffed Mussels with Spinach and Ricotta
Ingredients:
1 box jumbo pasta shells 1 cup fresh spinach, chopped 1 cup ricotta cheese 1 egg, lightly beaten 1/2 cup grated Parmesan cheese 1/4 teaspoon black pepper 1/4 teaspoon garlic powder 1 jar marinara sauce
Instructions:
Cook pasta shells according to package directions. Drain and set aside.
Combine chopped spinach, ricotta, beaten egg, grated Parmesan cheese, black pepper and garlic powder in a bowl. Mix well.
Preheat the oven to 375°F (190°C).
Pour half of the marinara sauce into the bottom of a 9×13-inch baking dish.
Fill each pasta shell with the ricotta mixture and place in the baking dish.
Pour remaining marinara sauce over shells.
Cover with foil and bake for 25 minutes.
Remove foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.
